Donna, I&#039;ll email you this reply as well so you see it. Sometimes the teas are changed with each course, but more commonly, you may prepare a couple of teas to try throughout the meal. You could use a tea cozy or tea warmer to keep the teapots hot throughout your tea party. Teas are not typically paired with courses, moreso with the flavors of that course. So for example, an oolong or black tea would pair nicely with chocolatey desserts. Green teas complement fruity flavors, for example, if you had blueberry scones. I would prepare two caffeinated teas (green, white, black, oolong or pu-erh) and one herbal tisane for guests who don&#039;t drink caffeine (mint is very popular), ahead of your party and just keep them warm throughout. If you steep a large batch of each tea in advance, you can keep them warm on the stove, and refill teapots as needed (instead of using teapot warmers at the table).
